Before I close this thing... I'm gonna say who I think will win.
Let's go ahead and throw away all the history and stuff about Knights and Samurais and just focus on who would win in a fight.
The answer... as much as I would like the Knight to win, the Samurai would win this fight due to certain factors.
Knights wear heavy, bulky armor... making mobility an issue. Like previously mentioned, Samurai armor looks bulky, but is lightweight and sturdy, giving them very good mobility.
Weapons... Knights normally would use big swords, normally double-edged. Indeed longswords are the common blades for most Knights, the more elite ones have better and stronger swords. Samurais have their Katana... and even if the blade is very very strong, I doubt it would be able to cut through a Knight's armor... if you target the armor directly, that is.
If the Knight is able to land a good blow to the samurai, he'd have the advantage, but not assured a victory. On the other hand, if the battle lasts long, the advantage switches over to the Samurai simply because he would have by then figured out certain things about his opponent like the armor weakpoint (joints), the type of weapon (Knight swords are normally big and heavy, thus their attacks are a lot slower than the Samurai's), the speed of his opponent, etc. With that knowledge, the Samurai can easily pick apart the Knight until the very end.
The winner... Samurai.
